In 2025, China's salted mushroom foreign trade is writing a new chapter on the global stage with a market size of 35 billion yuan as the cornerstone.

China has firmly taken the lead in the global salted edible mushroom market, accounting for over 40% of the market share, with pickled button mushrooms becoming the main export force with over 60% of the market share. Japan and South Korea are still core markets, with 89.2% of Japan's imported pickled button mushrooms coming from China each year. Sales of salted mushroom gift boxes during the Mid Autumn Festival in South Korea have increased by 11.2% annually. What deserves more attention is the rise of the "the Belt and Road" market. The power of industrial clusters should not be underestimated. Jiangsu, with its cold chain advantage, has won the first place in China's export volume, exceeding 1.2 billion US dollars in 2023; Yunnan matsutake salted products account for over 45% of the country's total, while the export growth rate of high-end wild mushrooms from Sichuan has reached 12%. These production areas have achieved full chain control from planting to export through the "enterprise+base" model, and the proportion of premium products in the high-end market has reached 15%.

The challenge is still ahead: the fluctuation of raw material prices and the upgrading of international standards are testing the resilience of enterprises. But with the upcoming revision of the "Management Measures for Edible Mushroom Strains" and the increase in the proportion of low salt and organic products to 30%, China's button mushroom in brine are shifting from "scale export" to "quality overseas".
